Both Cabernet bottlings have aromas and flavors which can only be achieved through "hang time" - a technique which chances the loss of crop if early winter sets in. Leaving the fruit to "hang" on the vine unusually long develops suppleness, increases color, and matures the tannins of the grapes. The wines are abundant in textural tannins yet soft as velvet. Crop thinning, allowing measured sunlight to reach the vine's fruit zone, and waiting for increased ripeness are all part of our viticultural practices. Caymus Cabernets offer a wide array of aromas and flavors including cocoa, cassis and vanilla.

Titus Andronicus Red 2013The 2013 vintage delivered one of the most ideal growing seasons to date. Our family vineyard, located on the valley floor just north of St. Helena on the Silverado Trail, possesses well-drained, sandy, alluvial soils and is characterized by its ability to produce complex wines with well-defined fruit flavors, gentle acids and naturally balanced tannins. The Cabernet Sauvignon vines vary in age. They were most recently planted between the years 1996 to 2001 and are a combination of the 337 and See clones. Further north, our Ehlers Lane Vineyard consists of a stony, dry streambed and a knoll composed of thin gravelly soil over hard volcanic ash. Planted entirely to Cabernet Sauvignon these infertile soils produce low yields of grapes with concentrated flavors.
Figgins Estate Red Wine 20132013 begins a string of warm vintages that deeply favor the relatively cool Figgins Estate Vineyard. The nose opens to a generous and harmonious fragrance of cocoa powder, cinnamon, mixed florals, dried ripe cherries and cassis. On the palate the wine is brimming with brilliant and robust black and blue fruits. The absolutely seamless fine long grain tannins and a string of energizing acidity bring refreshing lift and balance to the richness of the fruit. This vintage is not to be missed!

Epoch Estate Red Blend 2013Epoch's 2013 Estate Blend has a lot to tell. He is the most politically correct child in the bunch, including almost every red variety grown on Epoch ground (with even a healthy dose of Zinfandel!). In addition, the individual barrel lots that make up his DNA are combinations of almost every vessel type we use at Epoch - concrete, oak puncheon, one-ton t-bins and stainless steel tanks. There's a lot going on, and the wine reflects this with its mixture of red fruits, tobacco, leather, earth, vanilla, lavender, bright acidity and mouthwatering texture weaving in an out of each other. In his youth, you see all his different sides, but with time they will meld into one unique whole.

Conundrum White 2014A beautiful light hue, this wine opens with the evocative scents of apricot, pear and honeysuckle, as well as bright notes of orange and lemon meringue pie. Flavors of peach, apple and citrus are layered with with a touch of oak that comes from our use of barrel fermentation for a portion of the wine. Catena Zapata White Stones Chardonnay 2013The White Stones Chardonnay has a bright lemon yellow color with gold highlights. Aromas of pears and apples are underscored by notes of vanilla and white flowers and a stony minerality. On the palate, the wine has flavors of baked red apples, Bosc pears, and quince along with notes of creamy vanilla and baking spices. The finish is crisp and bright with a stony minerality that lingers on the palate. Food Pairing: This wine pairs well with a variety of more full-flavored fish dishes especially shellfish like shrimp, crab, and lobster.
